Crema di fagioli cannellini con pomodori e cipollotti - White beans soup with tomatoes and onions

Una delicata crema di fagioli cannellini, resa un po' più saporita dall'aggiunta di pomodori e cipollotti crudi e conditi.
Io ho usato i fagioli secchi biologici, li ho messi in acqua per circa 8/10 ore, cambiando l'acqua almeno una volta, e li ho lessati in acqua salata con un cipollotto e uno spicchio di aglio per un'ora, controllando sempre il livello dell'acqua che deve essere di un dito superiore a quello dei fagioli. Come per i ceci, anche i fagioli si possono preparare il giorno prima.

A delicate cream of cannellini beans, made more tasty by the addition of tomatoes and spring onions served raw.
I used organic dried beans, I put them in water for about 8/10 hours, changing the water at least once, and I boiled them in salted water with a spring onion and a garlic clove for an hour, checking the water level that should be of a finger higher than that of the beans. As for the chickpeas, the beans can be prepared the day before.

300 gr. di FAGIOLI CANNELLINI SECCHI - CANNELLINI BEANS DRIED
ACQUA - WATER
2 CIPOLLOTTI - SPRING ONIONS
2 spicchi di AGLIO - GARLIC cloves
6 POMODORI SAN MARZANO - TOMATOES SAN MARZANO
BASILICO - BASIL
8 fette di PANE - slices of BREAD
OLIO EXTRA VERGINE DI OLIVA - EXTRA VIRGIN OLIVE OIL
SALE - SALT
PEPE - PEPPER


ATTREZZATURA - WHAT I NEED

COME PROCEDERE - HOW TO PROCEED

Mettere a bagno e cuocere i fagioli come sopra descritto.
Lavare i pomodori e sbollentarli per un minuto per poterli pelare. Pelarli, tagliarli a cubetti e 
metterli in una ciotola.
Lavare e tagliare fino il cipollato, lavare il basilico ed aggiungeli al pomodoro.
Condire con sale ed olio e lasciar riposare.
Nel frattempo frullare con il minipimer i fagioli cotti insieme alla loro acqua fino a farli diventare una crema omogenea (nel caso aggiungere acqua) e scaldare la crema per circa 10 minuti, salare e mescolare affinché non si attacchi.
Tagliare il pane a fette ed adagiarle sulla lecchiera coperta con carta da forno, condirle con sale ed olio e mettere in forno sotto il grill fino a quando non diventeranno dorate.
Impiattare la crema di fagioli, aggiungere i pomodori conditi e decorare con il pane tostato ed una macinata di pepe.

Soak and cook the beans as described above. 
Wash the tomatoes and blanch them for one minute to peel them. Peel them, cut them in cubes and put them in a bowl. 
Wash and cut up the spring onion, wash the basil and add them to the tomato. Season with salt and olive oil and let it rest. 
Meanwhile, blend with the blender the cooked beans with their water until they become a cream (add water in case) and warm the cream for about 10 minutes, add salt and stir so that it does not stick. 
Cut the bread into slices and lay them on a oven tray covered with baking paper, season with salt and olive oil and put in the oven under the grill until they become golden brown. 
Serve the cream of beans in single bowls, add the tomatoes and garnish with seasoned toast and freshly ground pepper.

Crema di ceci alla Provenzale, con spinaci e pane tostato - Chickpea Provencal cream with spinach and toast -

Una deliziosa crema di ceci, resa sfiziosa dall'aggiunta degli spinaci ed il pane tostato.
Io ho usato i ceci secchi biologici, li ho messi in acqua per circa 4/6 ore e li ho lessati nella pentola a pressione, seguendo le istruzioni della stessa (mezzo chilo di ceci, 3 bicchieri di acqua, sale, cotti per 40/50 minuti dal fischio). I ceci si possono preparare il giorno prima.

A delicious chickpea purée, made tasty by the addition of spinach and toasted bread.
I used organic dried chickpeas, I put them in water for about 4-6 hours and I've cooked them in a pressure cooker, following the instructions of the same (half a kilo of chickpeas, 3 glasses of water, salt, cooked for 40-50 minutes from the whistle). The chickpeas can be prepared the day before.

500 gr. di CECI LESSATI - CHICKPEAS BOILED
150 gr. di SPINACI (o borragine) - SPINACH
3 PORRI - LEEKS
1 foglia di ALLORO - BAY leaf
3 spicchi di AGLIO - GARLIC cloves
2 cucchiai di ERBE AROMATICHE (TIMO, MAGGIORANA, ORIGANO, ROSMARINO TRITATI) - 
        spoons of HERBS (THYME, MARJORAM, OREGANO, ROSEMARY CHOPPED)
1 l. di ACQUA - WATER
8 fette di PANE - slices of BREAD
PREZZEMOLO tritato - PARSLEY chopped
OLIO EXTRA VERGINE DI OLIVA - EXTRA VIRGIN OLIVE OIL
SALE - SALT
PEPE - PEPPER

COME PROCEDERE - HOW TO PROCEED

Pulire e lavare i porri, tagliarli a fettine sottili e farli rosolare in una casseruola con 3 cucchiai di olio. Aggiungere i ceci già lessati, la foglia di alloro, 2 spicchi di aglio pelati e tritati e le erbe aromatiche. Aggiungere sale e pepe, 1 litro di acqua calda, coprire e lasciar cuocere per circa 30 minuti.
Aggiungere gli spinaci (o la borragine), puliti e lavati, e cuocere per altri 5 minuti.
Lasciar raffreddare. 
Togliere un paio di mestoli di ceci e spinaci da tenere da parte e frullare il tutto con il minipimer.
Tagliare il pane a fette, sfregarle con l'aglio, come per fare delle bruschette. Adagiarle sulla lecchiera coperta con carta da forno, salarle, cospargerle di prezzemolo ed olio e mettere in forno sotto il grill fino a quando non diventeranno dorate.
Impiattare la crema tiepida (o fredda), aggiungere i ceci e gli spinaci tenuti da parte, decorare con il pane tostato ed una macinata di pepe.

Clean and wash the leeks, cut them in thin slices and fry in a pan with 3 tablespoons of oil. Add the chickpeas cooked, the bay leaf, 2 cloves of garlic peeled and chopped and the herbs. Add salt and pepper and 1 liter of hot water, cover and cook for about 30 minutes. 
Add the cleaned and washed spinach, and cook for another 5 minutes. 
Allow to cool. 
Take off a couple of ladles of chickpea and spinach and mix all together with the blender. 
Cut the bread in slices and rub with garlic, how to make bruschetta. Place them on a tray for oven covered with oven paper, add salt, sprinkle with parsley and olive oil and put in the oven under the grill until they become golden brown. 
Serve the cream warm (or cold) in holsters, add the chickpeas and spinach kept aside, decorate with toast and freshly ground pepper.
